winter is well upon us and its time to regain all that lost energy spent keeping our bodies warm in the below freezing temperatures. Any excuse to eat desert my friends, any!
So without further a do let me give you my secret for a very simple and easy Cherry Pie or Pita od Višanja which is what it’s called in serbo-croatian and where the recipe comes from.
What you will need:
2 jars of 500g of sour cherries
1/2 cup of sugar (any type)
1/4 cup of vanilla sugar
2 tb spoons of ground cinnamon
1 pack of filo pastry
Strain the juice from the cherries, place into a mixing bowl and stir in the sugar, vanilla sugar and cinnamon.
Place 2 sheets of filo on a flat dry surface. Put the cherry mixture in the centre making sure you go right up to the edges. Then roll the filo up like a carpet.
Place the rolls of filo with cherry mixture into a baking pan. Brush the top with egg whites or butter.
Bake in a medium heat oven until the pastry is golden brown. Then cut the rolls into small slices.
To finish sprinkle with icing sugar until it looks like it got snowed on. Now it’s ready to serve.
